Instant Pot Lasagna

Cook Time: 15 minutes  |  Total Time: 20 minutes  |  Servings: Makes 6 servings

This family-friendly Instant Pot Lasagna recipe is prepared in less than 20 minutes and is made all in one pot, requiring minimal cleanup. It is suitable for babies from 6+ months, making it the perfect delicious meal for baby-led weaning.

Ingredients:

  • 1 Tbsp olive oil
  • 1 yellow onion, diced
  • 0.75 kg lean ground beef
  • 1 tbsp Italian seasoning
  • 1 tsp ground black pepper
  • 1/2 green pepper, diced
  • 1 tbsp minced garlic
  • 1 jar of tomato sauce
  • 450 g dry penne noodles or noodles of choice
  • 2 cups water or no sodium added chicken or veggie soup broth
  • 1/2 cup Ricotta cheese

Directions:

  1. Set Instant Pot to sauté on medium heat.
  2. Once the bottom of the pot is heated (approximately 1 minute), add the olive oil and diced onions. Cook while stirring occasionally until onions are tender.
  3. Add ground beef and continue to stir occasionally.
  4. While the beef is cooking, add Italian seasoning, black pepper, and diced green pepper.
  5. Once beef is browned, add minced garlic and stir the mixture. Turn off the Instant Pot.
  6. Layer the jar of tomato sauce over the ground beef (do not stir; layers should remain separate at this stage to prevent burning).
  7. Layer the pasta noodles over the tomato sauce (do not stir).
  8. Pour the water/broth over the noodles (do not stir).
  9. Place the lid on the Instant Pot and set to pressure cook on high for 5 minutes.
  10. Once the cooking process is complete, release the pressure and remove the lid.
  11. Stir in the Ricotta cheese.
  12. Serve and enjoy!
