Instant Pot Lasagna

This family-friendly Instant Pot Lasagna recipe is prepared in less than 20 minutes and is made all in one pot, requiring minimal cleanup. It is suitable for babies from 6+ months, making it the perfect delicious meal for baby-led weaning.
Ingredients:
- 1 Tbsp olive oil
- 1 yellow onion, diced
- 0.75 kg lean ground beef
- 1 tbsp Italian seasoning
- 1 tsp ground black pepper
- 1/2 green pepper, diced
- 1 tbsp minced garlic
- 1 jar of tomato sauce
- 450 g dry penne noodles or noodles of choice
- 2 cups water or no sodium added chicken or veggie soup broth
- 1/2 cup Ricotta cheese
Directions:
- Set Instant Pot to sauté on medium heat.
- Once the bottom of the pot is heated (approximately 1 minute), add the olive oil and diced onions. Cook while stirring occasionally until onions are tender.
- Add ground beef and continue to stir occasionally.
- While the beef is cooking, add Italian seasoning, black pepper, and diced green pepper.
- Once beef is browned, add minced garlic and stir the mixture. Turn off the Instant Pot.
- Layer the jar of tomato sauce over the ground beef (do not stir; layers should remain separate at this stage to prevent burning).
- Layer the pasta noodles over the tomato sauce (do not stir).
- Pour the water/broth over the noodles (do not stir).
- Place the lid on the Instant Pot and set to pressure cook on high for 5 minutes.
- Once the cooking process is complete, release the pressure and remove the lid.
- Stir in the Ricotta cheese.
- Serve and enjoy!
